Peasant Bread


So I decided to try a new recipe found in my Foxy Ladies Cookbook. It was so simple and so yummy. No kneading just lots of rising. And so worth it. Thanks, Heather for sharing this yummy recipe with us!
Peasant Bread
2 1/4 tsp. SAF yeast
2 C. warm water
1 tbsp. sugar
2 tsp. salt
4 C. flour
1 or 2 pinches dried rosemary, crushed

Dissolve yeast, sugar, and salt in water. Add flour until blended. Add crushed rosemary. Do not knead. Cover with plastic wrap and let rise for 2 hours. Flour hands and cut dough in half. Shape into ovals and place on a cookie sheet that has been sprayed with a lot of Pam and sprinkled with cornmeal. Cover and let rise 1 hour. Brush melted butter and sprinkle salt on top. Bake at 425 for 10 min. Reduce heat to 375 and bake 10-15 min. Brush on melted butter.
Variation: I used a Pampered Chef baking round. Sprinkled it with cornmeal but didn't need Pam.
