Another Saturday
A's baseball game was good. It was hot and we sat under the only columner tree out there. A did a great job. We still have to work on staying away from the high pitches... The other team was on fire! Wacking the ball to the out field every time..they were really pumped and it was kind of hard for us because we were short players, our coach is a lazy @#!*@, has to work every Saturday, so his 2 kids don't come! I have issues with him. Anywho...the kids did really well. Brandon has been able to help on Saturdays with warm ups and base coaching. I think he really enjoys doing that. He's really good with the boys.

A: No, 35 children is enough.

Lava Cake Recipe
6 oz. of semi-sweet baking chocolate (I used 1/2 bag of chocolate chips)
6 oz. of butter
3 eggs
1/2 c. sugar
1/3 c. flour
Greased Ramekins
Directions:
Preheat oven 350 degrees. Melt chocolate in double boiler. When chocolate is melted remove it from heat and add butter. Stir till butter is melted. In a small bowl, beat eggs and add sugar. Stir in chocolate mix and add flour. Pour batter into greased ramekins and place in oven. Bake for 10 min. Don't over bake. Bake until you get the perfect liquid~solid consistancy. When done, turn ramekin over onto plate. I poured Double Chocolate Syrup around the cake and topped with Vanilla Ice Cream. I topped the Ice Cream with crumbled Score bar. Makes 4 cakes. Using ramekin dishes.
Variations:
Cupcake pan instead of Ramekins.
Raspberry sauce instead of Chocolate Syrup.
Orange Sherbet instead of Vanilla Ice Cream with orange slices for garnish.
This recipe is so simple I was able to remember it by heart. The trick part is how long to cook it. I had to try 3 times to get it perfect. I put the ramekin dishes on a baking sheet in water, then on a baking stone...if you do this you will need to double your baking time. I still haven't figured out the approximate time. But I will be trying this again tomorrow with a friend.
Along with Pinto Bean Fudge. You are kringing at the very sound of that I know, but I have heard it is the best some have tasted and since we are trying to make things using our food storage I have to make it. I will let you all know how that goes. And yes, Veronica, I am trying to lose 25 lbs. but have been for the past 6 months. At least I was sharing. That's gotta count for something. I don't think I could eat a whole one by myself because it's so rich.

Chocolate Lava Cake
For our anniversary, Brandon and I went out to dinner. For dessert we ordered Hot Lava Cake. It was so tasty. Warm chocolate cake with chocolatey syrup oozing from the middle topped with a scoop of vanilla ice cream that was topped with bits of score bar. Oh my gosh, so yummy. So I decided to make my own. And here it is. This was so tasty but really rich. I had to share with the kids. And man did they love it.

Cattle Ranch
A's 2nd grade class took a field trip to the Quilici Cattle Ranch today. I asked A if he wanted me to go and he said he did. I love field trips in our small town...we get to walk to all of them. We walked across the street and through a new housing development to find 2 flatbeds of hay waiting to take us to the ranch. So we all got on the flatbeds for a hayride. What fun!
We were taken to the Quilici Ranch just down the dirt road. I had no idea this ranch was as big as it was. The land just kept going. The owners showed us their horses, cows, bulls, and hay.Everytime we passed more cows F would say, 'We don't need to get close to those cows.' The land was beautiful and so peaceful. I was impressed with how thought out the irrigation is. Just amazing to me. I had never thought about it before but there is real planning that goes into the whole irrigation system. Their irrigation runs off the Carson River. They consider themselves very lucky. Their ranch is about 127 years old and was a potato farm before it became a cattle ranch. This was really a fun field trip. A had a great time with Timothy, his best friend. And the weather was perfect. I bundled up and made sure A and F were bundled too. We didn't even need our coats until it was time to head back to the school. What a great way to spend my morning.

Opening Day
Saturday was Opening Day for all baseball players, young and old. Okay not that old. It all started with a parade, pancake breakfast, opening ceremonies, and let the games begin. They are crazy here about their sports. Serious Crazy.

Our Yard
Pinewood Derby
A was so excited to race his car in his first Pinewood Derby. He designed and painted it all by himself. He even sanded really smooth. B helped him put the tires on and the weights. They even had a 'Dad's Race'. So fun. We had popcorn and homemade Rootbeer. What a great night and I was so proud of all my scouts and A for having such great attitudes. They all did a fantastic job.
